What lies beneath the skin? Scientists checked how much we lose while preparing meals
Research indicates that many discarded parts of fruits and vegetables, such as skins and seeds, contain higher fiber content than the edible portions. A study analyzed 12 types of produce, revealing significant fiber differences, with pumpkin seeds and skins containing 9.25g of fiber per 100g. Despite the health benefits of fiber, many people do not meet the recommended daily intake, which is at least 25g in Poland. The study suggests that utilizing these often-wasted parts could help increase fiber consumption. However, some plant parts may contain harmful compounds, necessitating caution and proper preparation before consumption.
