Created by Brazilians in Lisbon, Salta overcame crises and now wants to reach São Paulo

Tomaz Salema Reis, a Brazilian chef with Portuguese roots, founded the restaurant Salta in Lisbon during the pandemic. The restaurant, which blends Central American and Asian cuisines, has seen significant growth and was included in the Michelin Guide in 2026. Despite early struggles with debt and near closure, Tomaz persevered without a salary for two years to keep the business afloat. He aims to expand Salta to São Paulo, having previously considered a location in Pinheiros. His culinary journey began in Brazil, continued in Australia, and now reflects a fusion of diverse cultural influences in his cooking. The restaurant has gained a loyal clientele, balancing local and international tastes, and emphasizes high-quality ingredients.
