Don't just peel your vegetables and fruit: "A lot of fiber-rich parts end up in the trash"

A British study reveals that many people discard the healthiest parts of fruits and vegetables, including fiber-rich peels. Dietitian Michaël Sels emphasizes the importance of consuming these parts to increase fiber intake, which is often below the recommended amount. Simple changes, like using unpeeled carrots or roasting pumpkins with their skins, can enhance both nutrition and flavor. While some peels, like that of pineapples, may be harder to incorporate, many are beneficial. Cooking does not diminish fiber content, which supports gut health by feeding beneficial microorganisms in the gut microbiome.
