A delicacy like no other. Certificates awarded for the baking of St. Martin's croissants

The Poznań magistrate announced that producers of St. Martin's croissants must meet specific recipe and preparation standards to receive certification. Since 2008, these croissants have been recognized in the EU as a product with protected designation of origin. The certification process begins with a bakery applying for an official inspection. If the product meets specifications, a quality certificate is issued, valid for one year, with possible extensions. The croissant's unique flavor comes from its flaky dough and filling, which includes poppy seeds, sugar, and various fruits. The tradition dates back to 1891, initiated by a local priest to support the needy, and today, around 250 tons are sold on St. Martin's Day alone.
